CARROT-GINGER SALAD DRESSING

Makes enough dressing for a large salad serving 4-6.

1 Tbs. raw, shelled hempseeds

¼ tsp. powdered ginger

1 tsp. onion powder

¼ cup seasoned rice vinegar

1 medium carrot, finely grated

1.         Place all ingredients, except grated carrot, in a small blender and blend until smooth.

2.         Add grated carrot and process briefly until blended.

3.         If dressing is too thick, add more rice vinegar to desired consistency.

Note: Larger amounts (triple or quadruple recipe amounts) can be made in a regular blender and stored in refrigerator.  After refrigerating, shake well to mix before serving
