CREAMY SALAD DRESSING
Makes enough dressing for 2 large salads, serving 5-6 people each.
4 Tbs. raw, shelled hempseeds
2 whole scallions, washed and roots trimmed off, cut into 1” long pieces
2 twists freshly ground pepper
½ cup seasoned rice vinegar (low-salt, low-sugar version if possible)
1. Place all ingredients in blender and process until smooth. A high powered blender, such as a Vitamix®, makes the smoothest dressing.
Note: Larger amounts (triple or quadruple recipe amounts) can be made and stored in refrigerator. After refrigerating, shake well to mix before serving.
If fresh scallions are not available, or desired, you can substitute 1tsp onion powder and ½ tsp garlic powder in place of the scallion. Without the scallion the dressing will be creamy but less thick.
Add to taste any of the following:
fresh red onion
“Thai” version -
½ lime juice, ½ seasoned rice vinegar
