Crispy Kale

CRISPY KALE


1 head Lacinato or curly kale
salt, to taste (optional)


1. Preheat oven to 300 degrees.


2. Wash kale leaves and shake, or blot with clean towel, to remove excess water. Remove central stem from kale leaves and cut leaves into large pieces.


3. Place kale pieces in single layer on a cookie sheet or large shallow pan. Sprinkle lightly with salt, if desired. Bake at 300 degrees for about 15 minutes. Take pan out of oven and check for, and remove, pieces that are completely crisp. Continue baking the remaining kale for another 5-10 minutes, checking often, until all kale is light and crispy. Be careful not to let it burn.
